200ml newly squeezed lemon juice
500g granulated sugar

For the Premix (yields 850ml, to serve 10)

200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Citrus Syrup: Combine all the items inside a pan, bring to a gentle boil, mixing so the sugar melts. After that, remove from the stove and leave to cool completely. Pour into a clean bottle, cap it and store in the refrigerator, it can be stored for up to one month.

To make Batch Mix: Pour the specified liquid ingredients into one big jug, let it rest for 60 minutes, then filter it best through cheesecloth, making it perfectly clear.

To serve: Pour 85ml from the premix to a mixing glass containing ice, and stir carefully for about 60 seconds to cool it down. Strain into an chilled martini glass or equivalent, garnish with some cranberries adding the final touch by giving it a quick spritz with the mandarin essence above the glass.
